THE ZOMBIE COCKTAIL This tropical drink by legendary Donn Beach of Don the Beachcomber restaurant kicked off the Tiki craze.

    ABOUT THE ZOMBIE COCKTAIL

This tropical drink by legendary Donn Beach of Don the Beachcomber restaurant kicked off the Tiki craze. Legend has it that Donn Beach originally concocted the Zombie to help a hung-over customer get through a business meeting. The customer returned several days later to complain that he had been turned into a zombie for his entire trip. Its smooth, fruity taste works to conceal its extremely high alcoholic content. Don the Beachcomber restaurants limit their customers to two Zombies apiece because of their potency, which Beach said could make one "like the walking dead."

    INGREDIENTS

    • 1 1⁄2 oz Jamaican rum
    • 1 1⁄2 oz Gold Puerto Rican rum
    • 1 oz 151-proof demerara rum
    • 1⁄8 tsp Herbsaint or Pernod
    • 1⁄2 oz Falernum
    • 1⁄2 oz Donn’s mix*
    • 1 tsp Grenadine
    • 3⁄4 oz Fresh lime juice
    • 1 dash Angostura bitters

    INSTRUCTIONS

    1. Put all of the ingredients in a blender, adding 6 oz of crushed ice last. We use a Vitamix blender
    2. Blend at high speed for no more than 5 seconds.
    3. Pour into a glass, add ice cubes to fill, then add the garnish.
    4. *Donn’s mix: Bring 3 crushed cinnamon sticks, 1 cup of sugar and 1 cup of water to a boil, stirring until the sugar is dissolved.
    5. Simmer for 2 minutes, then remove from the heat and let sit for at least 2 hours before straining into a clean glass bottle.
    6. Then add 1 part of the syrup and 2 parts of fresh grapefruit juice together.
